Food safety and HACCP fundamentals
Food safety management brings together the people, procedures and controls used to protect food during production, storage, preparation and service. This overview introduces HACCP and highlights questions to consider when choosing training.
What does HACCP mean?
HACCP stands for Hazard Analysis and Critical Control Points. It is a systematic way to identify significant food safety hazards and establish controls for a particular food process. A plan needs to reflect the actual products, facilities and working conditions.
What are the seven HACCP principles?
- Analyze the hazards associated with the process.
- Identify the points where critical control is needed.
- Define acceptable limits for those controls.
- Set out how the controls will be monitored.
- Plan corrective action when a limit is not met.
- Verify that the system works as intended.
- Maintain the necessary records and documentation.
Good hygiene practices and suitable operating procedures support the HACCP system. Staff need training appropriate to the tasks they perform.
How does the operating environment affect food safety?
Hospitality teams may need training on receiving and storage, cross-contamination, allergens, personal hygiene, and cooking and holding controls. Healthcare catering requires attention to the people served and their dietary needs. Remote catering operations also need to consider supply chains, water and storage conditions.
Requirements vary by location and activity. A general course or article does not replace an operation-specific food safety plan, applicable requirements or an assessment by a qualified professional.
What should you check before enrolling?
- Whether the syllabus matches your role and industry
- The delivery format, prerequisites and assessment
- The exact certificate or completion document offered
- Whether a separate examination or certification fee applies
- Whether your employer or relevant authority accepts the program for your intended purpose
